If you’re like most families out there, especially those with multiple kids who have varying palettes, going to the grocery store and shopping for lunchbox fillers can be a real challenge. This child wants one thing, the other won’t touch that ingredient, and your objective is only that they eat healthy and you don’t break the bank in doing so. Use the kitchen in your Dublin home to help create lunchbox snacks that are exciting and healthy. Here are 10 ideas!
4-Ingredient Banana Oat Bars– Bananas, oats, dates and nuts. These are gluten-free and easy as pie!
Oven-Dried Apple Chips– Dehydrated apple slices, dried in the oven.
Homemade Cheddar Crackers– All you need is a food processor and 1 cup all-purpose flour, 3/4 tsp. salt
1/2 tsp. ground pepper, 4 TBSP cold unsalted butter cut into small pieces, 8 ounces grated cheddar cheese, and 3-4 TBSP water. Pulse it together in the food processor, roll out the dough, cut it with a cookie cutter, and bake at 350° F for 15-20 minutes or until crackers are golden brown.
Crunchy Granola Bars– Crisp and nutty.
Spicy Baked Plantain Chips– Baked plantains are really satisfying.
Cheesy Spicy Popcorn– Jazz up popcorn with cheese and spices like paprika!
Roasted Curried Chickpeas with Rosemary and Thyme– If you’re using canned chickpeas, just remember to dry them really well so they crisp up!
Crudite and Dip– Cut up carrots, celery and cucumbers and send them with a small pack of ranch dressing.
Wasabi-Toasted Nori Crisps– Nori is seaweed, and it’s very good for you! All you need for this snack is 1/4 cup water, 2 tablespoons powdered horseradish wasabi, 10 sheets nori, and salt. Mix the water and wasabi, paint onto the nori sheets, and bake for 10-13 minutes at 250° F.
Maple-Butter Spiced Popcorn– If your kids prefer sweet, try this version.
